Soon after a potato is cut it begins to turn brown- this is called oxidation. Want to prep your potatoes ahead of time without the worry of them turning brown? Cut your potatoes and immediately place them in a bowl of ice cold water. They can be kept overnight in the fridge and will still be white as snow in the morning!
